Make It Yourself Monday: Makeshift Curry

We needed a last minute dinner, I've never made a curry before, I didn't use a recipe (though I used this one as a loose inspiration guide), and my father and grandmother, who were included in the meal, can't eat spicy things. So here is a recipe for sort-of curry. If you like more spice, you can pump it up with extra curry powder, or red pepper, and you could probably add a bit of salt too, which I didn't, because I was going for sweet and mild. But it's easy and pretty quick and even kids will probably be fine with it!

You will need:

1.5 lbs potatoes
2 carrots
1 yellow onion
1 tbsp curry powder (or more if you want it spicier)
1.5 tbsp butter
2-3 tbsp olive oil
1 14 oz can coconut milk
1/8 tsp cinnamon (a bit less)
1/8 tsp ginger
1 block extra firm tofu
1/2 cup water
1 bay leaf
1 cup white rice (you can substitute brown and follow the cooking directions on the package
pinch salt

This all served 5 with a couple portions of curry left over (but a bit less of the rice)

Before you do anything else, get your rice going. Rice crash course:

Rice is actually just as easy to make as pasta, it just needs to sit on the stove doing its own thing a little longer. For white rice, you will need a 2:1 ratio--in this case, 2 cups water to one cup rice. Put the water in a medium pan, slosh in a splash of olive oil and a pinch of salt, and bring the water to a boil. Once it's boiling, add the rice, stir, cover, and reduce to a low temperature. Keep an eye on the time--white rice usually takes around 18 mins, but can easily go several minutes longer or a bit shorter. When all the water has cooked over and the rice is soft and fluffy, remove it from the heat. After it's sat for a bit, lift the cover off for a while to let any extra moisture evaporate. Fluff it with a fork so it doesn't clump.

Now, time to fry the tofu! Cut it up into bite-sized cubes, so it looks like this:


I didn't really have time, but ideally you should press your tofu to make sure it can absorb plenty of flavor. To do this, put the tofu on a cutting board with a layer or paper towels or a folded tea towel (not terrycloth) between the board and the tofu. Then, put another layer of towel on top, and a heavy flat board on top of that. If you have time, stack some things on it for weight (phone books work well) and leave it while you go twiddle your thumbs for a while. If not, you can use my rush method of pushing all my weight onto the top board on and off for a few minutes. 

Add a couple tablespoons of olive oil to the pan and heat it to medium. Toss in the tofu, and sprinkle it with the powdered ginger and the cinnamon. It will smell like french toast. Fry until golden, then remove and set aside. Turn off the heat, but keep the pan. Reusing saves dishes. 


Chop your potatoes, onion, and carrots into nice bite-sized pieces. I used fingerling potatoes, which made this super easy, but any good potatoes will work. When you are done you will have three beautiful piles.




Get back to that pan. Melt the 1/5 tablespoons of butter into it. Add the tbsp of curry powder, and stir it around for a minute or two on low heat. 

Then, add the coconut milk and bring to a boil. When it is boiling, add the potatoes, carrots, onions, bay leaf, and 1/2 cup water. Then, reduce to a simmer and cover. Boil until the potatoes and carrots are tender and starting to absorb flavor (This will take anywhere from 12-20 minutes or so. If you get impatient to check a potato, run cold water on it AND cut it to cool before you try it. I learned the hard way). Stir occasionally. 



Serve over rice! Take a better picture than I did, without a begging puppy in the background, because I forgot about this post until I was eating outside in poor light.

What I really wanted to make was Massaman, a type of Thai curry, but I was missing all kinds of things, beginning with the fact that I had curry powder instead of paste (and they don't even go with the same cuisine), so this was the result. I do highly recommend Massaman, though!

An Interview With: Elana of Room 334!

It's time for another featured blogger...



Elana's style is simultaneously classic and unique, filled with a mixture of jewel tones, earthy shades, and amazing thrifting finds. Elana was kind enough to to take the time to chat with me about style, blogging, Breaking Bad, and more!

lm: When and why did you decide to start your blog? 
Elana: I've been reading fashion blogs for as long as I can remember, but never really had the time to do it myself. I always got the most inspiration from fashion bloggers and thought it seemed like such a fun hobby, so I finally starting doing outfit posts (on a blog I had written on occasionally) last summer when I had a lot of free time on my hands. Plus, it was the perfect way to combine my love of fashion and writing! 

lm: What inspires your fashion choices--do you have favorite stores, magazines, bloggers, style icons? 
Elana: I know every blogger says this, but it really IS other bloggers! I used to always look to celebrities, but now I get more inspiration from other girls around my age, with similar styles, and similar budgets. My favorite will always be The Clothes Horse. Of course, I still draw inspiration from other places. My favorite magazine is definitely Lula, and I love looking at stores like Madewell, Modcloth, and Anthropologie for inspiration as well.

lm: If you could travel anywhere in the world (a place you've never been) for one week, where would you go? 
Elana: I've always wanted to go to anywhere in the U.K., I feel like I'd love it there!

lm: What are three of your current faves (recipes, songs, brands, authors, whatever!)? 
Elana: Oh man, where do I begin! Well, I'm a huge TV nerd, and my two favorites are, and will always be, Breaking Bad and Arrested Development (my friends make fun of me for how much I talk about them.) Currently though, I've been watching a lot of X-Files. As for brand, I would say Dear Creatures. And the song I can't stop listening to right now is Lincoln Continental by The Felice Brothers.

lm: Finally, any tips for new (or established!) bloggers? 
Elana: I can't say I'm an expert, but my biggest thing would be to get to know your followers. The blogs I go to consistently are the ones who have made an effort to answer comments and read the posts of their followers. It gets so easy to get caught up in wanting more traffic to your page, but the more real you are and the more you care about the people who take the time to read your blog, the more people will want to read. Also, stay true to your style! I love how different every style blogger is and the best ones are those who just wear what they love every day.

A Lacy Day

 Finally, a long overdue outfit post. Since I've been substitute teaching in the city all week, I've been leaving before anyone is awake to take outfit pictures, and getting home when everyone is tired, so I haven't gotten any, but here is something from the one day I didn't work.

I found this shirt at goodwill the other day and it's my new favorite. I have no idea of its origins, as there are no tags or marking of any sort on it. But I love the lace panel and the pleated waist and the buttons down the back and the scalloped sleeves...most of which I guess don't show in this picture. I'm very happy about the sunglasses too. I bought them out of necessity without a real mirror, but I think the round frames are fun. 

It's been a tiring but good week. I'll leave you with this exchange between me and a student, who we will call Ethan:

(Belated) Make It Yourself Monday: Parsnip Oven Fries

I feel like I'm sending out one of those mediocre "Sorry I forgot" birthday cards. This will probably be a somewhat meager week all around, since I'm in the city working, have no one available to take outfit pictures, and convinced myself I didn't need to put out a call for guest posts ahead of time. But, without further ado, a delicious parsnips fries recipe. I vaguely adapted it from somewhere online, and now I cannot find where, but all oven fry recipes are basically identical and I didn't follow it closely, so I don't feel too horribly guilty.

You will need:
3 good sized parsnips
olive oil
spices/herbs of your choice--but for a good first time combo, I recommend garlic salt (lovely as fresh garlic is this distributes the flavor better), rosemary, thyme, and a hint of black pepper or lemon pepper.

This recipe is easy as pie.

1) PREHEAT THE OVEN TO 450 Farenheit.  Scrub off your parsnips, chop off the dried parts of the end and tips, and admire them.


2) Cut them up into nice skinny fry sized pieces. The easiest way to do this is to slice them lengthwise, and then slice those sections even smaller lengthwise. When you are done, spread them evenly on an edged tray, so they look pale and unappealing, like this:


3) Next, coat the fries in about two tablespoons of olive oil, tossing them to make sure it is evenly distributed. Add spices to taste, and repeat the tossing. They might look marginally more appealing, 


4) Put the tray in the oven. The parsnips should at least be golden, which will take at least 10-15 minutes, but if you want them to be crispy, I would let them go longer. Just check them frequently, making sure to shake them around every 5 minutes or so, until they are as dark and crispy as you like. If your oven has a convection bake option, that will make them even crispier.


5) Eat! I like them not dipped in anything, but I suspect an aioli or a good mustard would be great.

Puppy Clothes

I'm continuing the theme of casual for the week, since with a partially trained puppy around, I need clothes that won't snag, or stain, or any of that.






Trusty keds, and one of those bracelets that was everywhere last summer. Mine is from a little boutique in Rhode Island and I can't remember who made it. If you like this style, Honestly wtf has a tutorial on how to make a super simple bracelet, which inspired me to make this one.

I really like this shirt. It's so silly and loud and it makes me feel like spring is really coming. It was almost left at Goodwill when Ali didn't like the fit, but she talked me into handing over the 6 quarters required to buy it. And keds always remind me of walking up the slide at the playground as a kid, so all in all, a very happy outfit. Tomorrow I'm hoping to have more time with the dogs and some tagsale adventures before I head back to New York for another week of substitute teaching...

Interview with: Ashley of Southern (California) Belle!

From time to time, I'll interview bloggers who I think have really great personal style that I'd like to share with you. First up is....



From her colorful hair to her bright, creative outfits, Ashley has a look that is completely her own and completely great. If you don't already read her blog, it's definitely worth checking out! Ashley shared some of her hair and style thoughts, favorite recipes, and blogging advice with me here.


lm: When and why did you decide to start your blog? 
Ashley:I decided to start my blog back in early 2011.  My husband (then boyfriend) had a job where he travelled the world for a living and I was often home alone for months at a time.  I've always loved reading fashion and personal style blogs so I figured I would give my own blog a go.  Although I didn't post very much at first, I got a great camera later on that year and started becoming more serious about it.  The rest is history!

lm: What inspires your fashion choices? How do you put an outfit together? 
Ashley:Most of my inspiration comes from other bloggers.  Since I read so many wonderful girls' blogs I get inspiration everyday.  I definitely plan my outfits ahead!  I tend to be the person who wants to wear my new pieces as soon as I get them, so my choices usually involve the newest thing I have in my closet.

lm: I can see from your blog that your hair has been all kinds of amazing colors! Have you had any favorites? Any tips for those who want to try a different hue themselves?
Ashley:My favorite hair color is actually the one I have right now.  It's bright purple that fades to a pink ombre.  I've always loved changing my hair up and I'm no stranger to color!  If you're going to do your hair yourself, just make sure you know what you're doing.  I've experimented with my hair since I was 16 so I've had many years of trial and error.  My top two tips would be to always to a strand test before taking the plunge on a new color and if you choose to bleach your hair, a lower volume of developer is always safer.

lm: What are three of your current faves (recipes, songs, brands, authors, whatever!)?
Ashley:I'm on a pretty big health kick right now so my three favorite recipes right now are:
Green Lemonade- My sister is a nutritionist and a juicer enthusiast and this recipe is so healthy and so yummy! http://aroundtheworldinhealthyways.com/
Tomato, cucumber, and onion salad- I have yet to post this on my blog (it's so easy), but I've been eating it for days on end.  It's seriously addicting!
Plain greek yogurt with honey- This is a wonderful substitution to dessert.  It gives you that sweet fix without all the guilt.

lm: Finally, any tips for new (or established!) bloggers?
Ashley:I think the best thing to remember when blogging is that you really want organic followers.  It's not all about the numbers!  I know it's easy to get roped into the "follow for follow" numbers, but the best bloggers have the followers that actually read your blog and interact with you.  While my blog is not big by any means, I love my followers because I feel like I know them.  I'd take that over thousands of empty numbers anyday :)
